Dr. Yair Margalit
Ex-scientist (physical chemist). He worked for many years as a researcher until he quit his scientific activities and started a second phase of life as grape grower and wine producer. Also, Yair is the winery manager. He still maintains his academic links by teaching winemaking technology and wine chemistry at the Faculty of Food Engineering at the Israel Institute of Technology, the "Technion". He wrote three books, which are used worldwide as textbooks in the wine industry and in the academic studies of enology and winemaking. The books are:
“Small Winery Operation” (1990) “Concepts in Wine Chemistry” (1997) "Concepts in Wine Technology" (2004)
