Years of wine

1989



The first commercial vintage of Margalit Winery was a Cabernet Sauvignon and was a co production by Margalit Winery and Meron Winery. The grapes were purchased, from the Kerem Ben Zimra vineyards. The cooperation of knowledge (ours) and equipment (theirs) produced 900 bottles which where all sold on one spring Saturday two years later in the first Margalit Winery annual tasting at Bilu Village near Rehovot. This wine, which we were very proud of, set new standards of quality and price in the Israeli market. The cost per bottle was, 33 shekels. In a tasting last year, the wine was still young and had developed a strawberry, raspberry aroma. It seems it still as a long way to go.

1982 – 1988



After coming back from a sabbatical year in Davis California, which was exploited for studying as much as can be learned at the enology department. I tried to implement winemaking in the back yard of our home in Rehovot. Asaf was a young boy at that time. The wines were hand out to friends and family for our enjoyment. Much was learned in those years with out the need to cope with financial task of the real market. The seeds for writing the book "Small Winery Operation" were planted during those years. The book was published in 1990 in California and became a Best seller in the wine business.
